Precious white autumn truffle
Available from September to January. Sometimes referred to as the Alba truffle, the tuber magnatum is extremely rare and must be savoured fresh. It is the most aromatic of all of the truffles with a sublimely intoxicating, earthy fragrance.
It is never cooked but finely shaved on top of the finished dish. It brings an entirely new dimension of flavour to such simple dishes fare as eggs, steaks, risottos and creamy pasta sauces
EXTRA-class variant is for highly-sought-after large truffles that weigh upwards of 100gr per piece.
