The best way to cook with white truffles is usually the simplest way. Eggs pair naturally with the white winter truffle allowing its aroma to shine through. This recipe builds up layers of truffle flavour. Firstly the eggs are stored overnight in a jar with the truffle and become infused with the potent aroma. The scrambling then takes place over a bain marie – cooking is gentle so the flavour is not impaired in any way. Fresh truffle butter is added to the eggs as they cook and finally the finished dish is shaved with delicate slithers of fresh truffle. Enjoy.
