Tuber brumale, often called the musky truffle, might not be as well known as the other black winter truffle, the Perigord (tuber melanosporum) but it is well worth learning how to find it.
Hardier and hence more widespread than the precious black, it can be found in the wild throughout Europe even in the colder, damp climates of the north. Cultivated brumale orchards are growing in popularity in the UK right now as more people are discovering what the Italians, Spanish and French have known for many years – that the musky truffle has one of the most delectable flavours of all the blacks.
